🛒 Ingredients

For the chicken marinade:

  • 800g chicken (bone-in pieces preferred)
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice

  • 1 teaspoon turmeric powder
  • 2 teaspoons red chili powder
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt to taste

For the rice:

  • 2 cups basmati rice
  • Water for boiling
  • 2 bay leaves
  • 4 green cardamom pods
  • 4 cloves
  • 1 cinnamon stick
  • 1 teaspoon salt

For the biryani base:

  • 3 large onions (thinly sliced)
  • 3 tablespoons oil or ghee
  • 1 tablespoon butter (optional)
  • 2 tomatoes (chopped)
  • 2 green chilies (slit)
  • Fresh coriander leaves (handful)
  • Fresh mint leaves (handful)

For layering:

  • ½ teaspoon saffron soaked in 3 tablespoons warm milk (optional)
  • 2 tablespoons fried onions (reserved)
  • 1 tablespoon ghee

🔪 Preparation Steps


1. Marinate the chicken

In a large bowl, combine:

  • Yogurt
  • Lemon juice
  • Ginger-garlic paste
  • All spices and salt

Add the chicken and mix thoroughly, ensuring every piece is coated.

Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.

👉 The longer the marinade, the more tender and flavorful the chicken will be.


2. Prepare the rice

Wash basmati rice thoroughly until the water runs clear. Soak for 20–30 minutes.

Bring a large pot of water to a boil. Add:

  • Bay leaves
  • Cardamom
  • Cloves
  • Cinnamon
  • Salt

Add the soaked rice and cook until 70% done (the grains should still have a slight bite).

Drain and set aside.


3. Fry the onions

Heat oil or ghee in a large pan.

Add sliced onions and cook on medium heat until golden brown and caramelized. This may take 15–20 minutes.

Remove half of the onions and set aside for garnishing.


4. Cook the chicken base

To the remaining onions in the pan, add:

  • Tomatoes
  • Green chilies

Cook until the tomatoes soften and the oil begins to separate.

Add the marinated chicken and cook on medium-high heat for about 10–15 minutes until the chicken starts to cook and the मसाला thickens.

Do not fully cook the chicken—it will finish cooking during layering.


5. Layer the biryani

Lower the heat.

Spread half of the partially cooked rice over the chicken.

Top with:

  • Some mint and coriander
  • Fried onions
  • A drizzle of saffron milk
  • A little ghee

Add the remaining rice and repeat the toppings.


6. Dum cooking (steam cooking)

Cover the pot tightly with a lid. You can seal the edges with dough or foil to trap steam.

Cook on very low heat for 20–25 minutes.

👉 This step allows the flavors to meld and the chicken to finish cooking while infusing the rice with spices.


7. Rest and serve

Turn off the heat and let the biryani rest for 10 minutes before opening.

Gently fluff the rice, mixing slightly to combine layers without breaking the grains.
