Ingredients
For the Blue Dough
- 1 cup (240 ml) whole milk, warm (about 110°F / 43°C)
- 2¼ teaspoons (1 packet) active dry yeast
- ½ cup (100 g) granulated sugar
- 2 large eggs, room temperature
- ½ cup (113 g) unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract
- 4½ to 5 cups (560–625 g) all-purpose flour
- 1 teaspoon salt
- Blue gel food coloring (Cookie Monster blue – use gel, not liquid)
For the Cinnamon Cookie Filling
- ¾ cup (150 g) brown sugar, packed
- 2 tablespoons ground cinnamon
- ½ cup (113 g) unsalted butter, very soft
- 1 cup crushed cookies (chocolate chip cookies, Oreos, or both)
- ½ cup mini chocolate chips
For the Cookie Cream Cheese Frosting
- 8 oz (225 g) cream cheese, softened
- ½ cup (113 g) unsalted butter, softened
- 2½ to 3 cups (300–360 g) powdered sugar
- 1 teaspoon vanilla extract
- 2–3 tablespoons heavy cream or milk
- ½ cup finely crushed cookies (plus more for topping)
- Optional: blue sprinkles or mini cookies for decoration
Step 1: Activate the Yeast
In a large bowl, combine the warm milk and granulated sugar. Sprinkle the yeast over the surface and let it sit for 5–10 minutes until foamy. This step is crucial — if the yeast doesn’t foam, your rolls won’t rise properly.
Once bubbly, add the eggs, melted butter, and vanilla extract. Whisk gently until smooth.
Step 2: Make It Blue 💙
Add a generous amount of blue gel food coloring to the wet ingredients. Start with a small amount and mix well, then adjust until you get a bold Cookie Monster blue. Remember, the color will lighten slightly once flour is added.
Now stir in the salt and 4½ cups of flour, one cup at a time. Mix until a soft dough forms. If the dough is sticky, add more flour a tablespoon at a time.
Step 3: Knead and Rise
Turn the dough out onto a lightly floured surface and knead for 8–10 minutes, until smooth, elastic, and slightly tacky but not sticky. The dough should spring back when gently pressed.
Place the dough in a greased bowl, cover with plastic wrap or a clean kitchen towel, and let it rise in a warm place for 1 to 1½ hours, or until doubled in size.
Step 4: Prepare the Cookie Filling
In a bowl, mix the brown sugar and cinnamon until evenly combined. Set aside.
Crush your cookies — you want some fine crumbs and some small chunks for texture. This mix of sizes is what gives every bite surprise cookie goodness.
Step 5: Roll, Fill, and Roll Again
Once the dough has risen, punch it down gently and roll it out on a floured surface into a large rectangle, about 16 x 12 inches.
Spread the softened butter evenly over the dough, all the way to the edges. Sprinkle the cinnamon sugar mixture generously over the butter, then scatter the crushed cookies and mini chocolate chips on top.
Starting from the long edge, roll the dough tightly into a log. Slice into 12 even rolls using dental floss or a sharp knife.
Step 6: Second Rise
Arrange the rolls in a greased 9 x 13-inch baking dish, leaving a little space between each one. Cover and let them rise again for 30–45 minutes until puffy and touching.
This second rise is what gives you ultra-fluffy cinnamon rolls — don’t skip it!
Step 7: Bake to Perfection
Preheat your oven to 350°F (175°C).
Bake the rolls for 25–30 minutes, until the tops are lightly golden and the centers are fully cooked but still soft. If they brown too quickly, loosely tent with foil.
Remove from the oven and let cool slightly while you prepare the frosting.
Step 8: Cookie Cream Cheese Frosting
In a large bowl, beat the cream cheese and butter together until smooth and creamy. Add powdered sugar gradually, mixing well after each addition.
Stir in vanilla extract and heavy cream until the frosting is thick, fluffy, and spreadable. Fold in the crushed cookies for that signature Cookie Monster crunch.
Step 9: Frost Like You Mean It
Spread the frosting generously over the warm (not hot) cinnamon rolls. Let it melt into the swirls and drip into every crevice.
Finish with extra cookie crumbs, mini cookies, or sprinkles on top. This is not the time for restraint.
Serving & Storage Tips
- Serve warm for maximum gooeyness
- Store leftovers covered in the fridge for up to 4 days
- Reheat in the microwave for 15–20 seconds to bring them back to life
- These rolls also freeze beautifully (unfrosted is best)
